Simon Zapata was born December 4, 1945 in Robstown, Texas to Herminia Vargas and Manuel Zapata. He departed this life January 22, 2021 in Waxahachie. Simon was friendly and always had a smile. He loved his grandkids, and he loved to drive. He retired from Southern Star Cement as a truck driver then drove for his family and took on the brave task of teaching his grandkids to drive. He loved watching westerns “Gunsmoke” was his favorite, and he always enjoyed helping his family in any way he could.

Left to cherish Simon’s memory are his wife of 48 years, Lisa Zapata, children Emiliano C. Zapata and Amy and Samuel Zapata, grandchildren Loren, Bryce, Emiliano, Jr. and Horatio, as well as numerous nieces and nephews. Simon was preceded in death by his parents, daughter Rachel Zapata and his siblings.

Visitation will be Tuesday, January 26, 6:00-8:00 PM at Boze Mitchell McKibbin Funeral Home in Ennis.
